Breakfast this morning before work. @organicgirl baby spring mix, scrambled eggs, avocado and an Amylu uncured bison polish sausage. Breakfast is the one thing I’m struggling with right now. I’m used to eating later so it’s been hard to eat something early that’s filling enough to tide me over until lunch. And honestly I was so focused on lunch and dinner instead, I didn’t prep anything. Hopefully this will do the trick today!
Blueberry Mezze Salad from @farmersfridge. I picked it up yesterday while I was downtown for lunch today, and after running errands all morning, I was very pretty pleased with myself that I did! Blueberries, watermelon radishes, cucumber, sugar snap peas, quinoa tabbouleh salad with chickpeas, and housemade blueberry vinaigrette. As delicious as it is colorful!

Lauguna avocado toast @leftcoastfood. Toasted whole grain bread, avocado, orange slices, sunflower seeds, ricotta salata, sunflower sprouts, orange vinaigrette, za’atar spice. Other avocado toast only dream of being this good! It’s one of my very last days of being an unemployed, stay-at-home wife before I start a new job in the northern suburbs. Doing all the things downtown that make me happy (and would bore my husband to death).
I know, I know. It doesn’t look like much and I wasn’t going to share it, but honestly, this combo was 🔥. So overlook it’s looks and just savor it! Baked chicken breast tenders marinated in @primalkitchenfoods classic marinade, roasted Japanese sweet potato wedges, pickled red onion, a sauce made with @tessemaes honey mustard, mayo and coconut aminos, and wrapped up in green leaf lettuce from @veggiesmadeeasy. Best part? It was all components of an earlier meal prep so all I had to do was assemble then chow down! 😋

Breakfast tacos to get this Monday started. 🙌 @onedegreeorganics sprouted corn tortillas with a layer of @cedarsfoods balsamic caramelized onion hommus, @organicgirl baby spring mix, two scrambled eggs, spoonfuls of @traderjoes vegan kale, cashew & basil pesto and @mightyvine cherry on the vine tomatoes (so sweet, like candy!). Yep, just as delicious as it is colorful! 🌈
Such an amazing summer day here in Chicago, definitely wanted to crack open the grill for a summer-worthy meal. Thin patties (so you can stack them!) made with @eatpre_ 80/20 ground beef with American cheese. I wrapped mine in crisp @veggiesmadeeasy green leaf lettuce with sweet onions, @ohsnappickles, and a serious squeeze of @sirkensingtons special sauce. Paired with oven roasted sweet potato fries! Yum-O!

Dice and saute with olive oil: asparagus, mushrooms, sweet peppers, zucchini, garlic and onion powder. Toss sauteed veggies with quinoa. And you're done. Keep in fridge for sides during the week for breakfast lunch or dinner! OR....

I knew I was going to have to get creative to use all the meat from the brisket we smoked yesterday. But then this literally came to me in a dream last night. Barbecue brisket “nachos” made on roasted sweet potato rounds, with a layer of @organicgirl baby spring mix, shredded brisket tossed in @thenewprimal’s Noble Made mustard BBQ sauce (this sauce is 🔥 and @whole30approved!). I topped it with diced pickles because, come on, who doesn’t like pickles with their barbecue?!
I know its poor quality, but my daughter did the recording and sent it to me... these are the last of my fireworks pack. The kids enjoyed themselves, now it's time for baths and beds. Have a blessed and stress free evening everyone. #keepittasty

Happy 4th of July! We tried our hand at smoked brisket today. It’s not perfect, but we’ll get better next time. Some parts are really good and some are a little dry, but I added @thenewprimal’s Noble Made mustard BBQ sauce and it was SO good (totally covering any flaws in the meat)! Also on my plate: @organicgirl baby spring mix with a dressing made from @tessemaes honey mustard, mayo, and coconut aminos and a chunk of cornbread with homemade honey butter. 🍞+🍯= 🔥
This was going to be a (fish) tale of two tacos, but my husband scarfed his down before I could get a pic (oh, the travails of being an Instagram husband!) so this is just my version. @thebetterfish barramundi on @onedegreeorganics sprouted corn tortillas with @organicgirl spring mix, pickled red onions, and avocado crema. My husband skipped the greens, but he added some of the homemade coleslaw I made for tomorrow’s dinner. This is how we make dinner work around here sometimes: I make something I know we both basically will eat and then just augment it to each of our tastes. Better than making two separate meals!

Back to the basics for lunch and a bowl with all the goods. A base of @organicgirl spring mix tossed with @traderjoes green goddess dressing, chicken breast tenders marinaded in @thenewprimal classic marinade (makes run of the mill chicken breasts something extra special!), oven roasted carrots, mushrooms and onions sautéed with coconut aminos, Japanese sweet potato coins (slightly over cooked 😩) to scoop up that @cedarsfoods balsamic caramelized onion hommus.

A grocery store run is at the top of my list today but before I go, I pulled together breakfast with odds & ends left in the fridge after a weekend away. @onedegreeorganics sprouted corn tortillas with a schmear of @cedarsfoods balsamic caramelized onion hommus, a handful of @organicgirl spring mix, two scrambled eggs, one really ripe avocado and spoonfuls of @traderjoes vegan kale, cashew & basil pesto. Honestly, the combination was so good, I might just make it again tomorrow even when the fridge is fully stocked again.

Its supposed to reach 100 degrees today. If you live in the tri state area, you know its gonna feel like 200 degrees and sticky! Please be safe and stay hydrated! Skipping a breakfast-out in favor of getting on the road early means tweaking the complimentary hotel breakfast to work for me. Toasted English muffin with banana and added my own @siggisdairy vanilla yogurt and a packet of @rxbar honey cinnamon peanut butter. I was hoping for some scrambled eggs, but decided to forgo the sketchy cheese omelet things and stick to what I knew would be good.
Doing it Detroit style! Back in the day, when he was flying back and forth between CO and MI (and back in the day when they fed you food on airplanes, even in coach) @waynephillips ate his fair share of @buddyspizzadet on his Northwest Airlines flights. Now, it’s a must-stop whenever we’re in the area. Oh man, those crispy edges and corners! 🤤
Lunch in Detroit @bakersfielddet. The braised short rib tostada (with a fried egg, black beans, queso fresco, and a cilantro buttermilk dressing) was my favorite, but the chips/quac and tacos were pretty good too. 😋

Kicking off road trip weekend with overnight oats prepped the night before. So easy to grab, go, and eat in the car (while my husband is driving, obvi). Oats, @califiafarms toasted coconut almondmilk, @siggisdairy vanilla yogurt, 1/2 banana, roasted cherries and the remnants of the @crazyrichardspb left in the jar. Hearty, healthy fuel for whatever comes this weekend (that just so happens to taste like a banana split!). 🍌 + 🍒 + 🥜
I was struggling to come up with something for dinner tonight and then this idea came to me: pesto chicken grilled cheese (would have been a panini but I was too lazy to pull down the panini press from the really high cabinet over the fridge 😂). Sourdough bread spread with @traderjoes vegan kale, cashew & basil pesto, then topped with fresh mozzarella, jarred roasted peppers (watch out for added sugar!), and @applegate grilled chicken breast strips (super clean ingredients and it’s Whole30 approved!). The flavor profile is hardly original, but oh man, this was 🔥🔥🔥.
Does anyone else fret about the delicate balance of having just-right ripe bananas for eating, in just the right quantities? Hmm, just me? 🙋🏻♀️ Sometimes we go through a lot of bananas, but sometimes not so much. I usually just freeze the too-ripe, extra bananas for smoothies, but sometimes I’m called to use them for a greater purpose (usually at the urging of my husband). My favorite is @fitmittenkitchen‘s paleo banana chocolate chip skillet cake. It’s easy, it’s healthy-ish-er, and so freaking delicious! So delicious, even my husband is a fan! It feels especially decadent with a dollop of @siggisdairy vanilla yogurt and a swirl of almond butter on top. (But I like knowing that it’s really not decadent because it’s made with just good, whole foods.) 🍌 + 🍪 = ❤️

Pulled this together for lunch today from my meal prep. Quick and easy, hearty and nutritionally dense. Not super pretty, but the avocado rose makes it special though, amright? Cauli rice with peas and carrots, sautéed mushrooms with coconut aminos, ground turkey and kale. Added the avo and a handful of @sietefoods new nacho grain free tortilla chips (these are REALLY good).
Seven-hour smoked spareribs (using the 3-2-1 method) made this Sunday something special! Easy green bean salad with quick-pickled onions, tossed in ranch dressing and a slab of home-baked cornbread for good measure. Notice, I didn’t say homemade cornbread, it’s just a box mix. Maybe I’ll tackle perfecting homemade cornbread after I master my buttermilk biscuits. But for now, my husband likes the box mix better than mine from scratch. Yep, true story. 😳

Sunday morning, post-gym, leg-day breakfast. Avocado toast made on toasted sourdough with @cedarsfoods balsamic caramelized onion hommus, avo (obviously 🙄), over medium egg (oozy but not runny), and @traderjoes everything but the bagel seasoning. Added @organicgirl baby spring mix with a dressing made from @tessemaes honey mustard, mayo, and coconut aminos and a little cup of supremed grapefruit slices on the side.
Summer, summer, summertime. ☀️ First decent day in Chicago in over a week calls for dinner from the grill! @eatpre_ 80/20 ground beef formed into super thin patties, grilled with American cheese. Two patties stacked on Martins @potatorolls, topped with onions, @ohsnappickles, and a significant slather of @sirkensingtons special sauce. Added @organicgirl mixed greens and a handful of roasted sweet potato fries to my plate for good measure! Summertime, oh man, I love you! ❤️
