This easy Chocolate Mastiha Mousse recipe from @hungryandfussy is delicious as well as #glutenfree! #HappyFriday!

300G 70% COCOA DARK CHOCOLATE, CHOPPED
4 EGGS, ROOM TEMPERATURE
4 TBS CASTER SUGAR
2 TSP GROUND MASTIHA TEARS
1½ CUP (375ML) POURING CREAM
Place chocolate in a large glass bowl and melt in microwave. Stir to combine and set aside to cool slightly.
Whisk the eggs and sugar together for about 5 minutes until triple in volume. Add ground mastiha and whisk until combined.
Gently fold the egg mixture through the melted chocolate one third at a time with a large rubber spatula.
Gently fold through the pouring cream.
Pour into serving glasses and refrigerate until set.
Serve with dollop cream, chopped pistachios and dried rose petals.
Place chocolate into the Thermomix bowl and grate for 8 sec/speed 6.
Melt chocolate 4 min/50 deg/speed 2. Pour the mixture into a separate bowl and set aside.
Clean and thoroughly dry the Thermomix bowl.
Place the butterfly into the TM bowl and add the eggs and caster sugar. Whip 3 min/Speed 4 or until triple in volume.
Add ground mastiha and whip 10 sec/speed 4.
Add the chocolate mixture and combine in reverse mode/20 sec/speed 3.
Add pouring cream and combine in reverse mode/10 sec/speed 3.
Pour into serving glasses and refrigerate until set.
Serve with dollop cream, chopped pistachios and dried rose petals.
This is one of my all-time favorite easy dinners. Roasted kielbasa with red cabbage and red onions, served with whole-grain mustard. Adapted from @marthastewart. Toss red cabbage (1 small head cut into small wedges) and 2 small red onions (cut into 1-inch wedged) with 2 tbsp olive oil and 3 tbsp cider vinegar, 2 tsp caraway seeds and salt/pepper. Bake on rimmed baking sheet for 25 mins at 400 degrees. Turn veggies and add 1 1/2 pounds smoked kielbasa (slashed in a few places) and cook about 20 mins. more. Hello friends, old & new, it’s me here to finally sort of get back to posting and into the groove of things! The last couple of weeks have been hard for me. I’ve been dealing with a lot of personal demons & just recently a family death. Along with all of these downfalls I have also stopped eating healthy and I definitely feel the negative affects it’s caused my body. .
While grieving is okay, I also need to keep up with my health and my eating habits because that also plays a key roll in how I feel. Just the simple 2-3 days without celery juice this week have made me feel sluggish & bloated. My skin has also started to flare up again. .
For the rest of this weekend I will continue to take it easy, but come Monday I will be back to my yoga/pilates, my juicing, and cooking & posting more often! Any ideas or recipe recommendations are welcome, happy cooking 🥘 🧡

You guys remember that Instant Pot low carb cheesecake I made late last night? That I forgot was chilling in the fridge until about a half hour ago when my husband got home from work and asked for some? 😂 Here it is! We both just ate a small slice. My husband couldn’t believe it was keto! It tastes like Cheesecake Factory “real” cheesecake. Really the only thing different when it comes to the filling is instead of sugar, the recipe calls for a low carb sweetener. (Duh) Everything else is typical “real” cheesecake ingredients which is why it tastes so familiar to him 😄 And then obviously the crust is an almond flour crust.
So it goes crust, cheesecake filling, sour cream topping, then a dark cherry topping that I made using @my_keto_journal’s theory for a chia jam. I used a lot less water for this topping than I typically do for jam though. My husband likes the (non keto) cherry delight dessert, so the cherry topping was a play off of that. He was one happy keto hubby today! Thanks @theketogenicmermaid for this recipe! 🍒

Almond butter cookies
(Smothered in silky smooth almond butter)
Keto-friendly, low-carb, protein-rich, and most importantly delicious
4 scoops @livepeakperformance all-5 multi collagen (1/2 cup)
1/2 cup coconut flour
1/3 cup maple syrup (@lakantosweetener sugar-free)
1/3 cup @nooshbrands almond butter
1 1/2 tsp vanilla stevia or extract
2 tbsp monk fruit (golden)
2 cups almond protein (@nooshbrands )
1/4 cup Lilly’s sugar-free chocolate chips
1 tsp baking powder
1/8 tsp Himalayan sea salt
Preheat the oven to 375°F.
In a small dish, mix together egg.
Mix together the maple syrup, nut butter, vanilla, and monk fruit.
Bake for 8-12 minutes *Notes
Mixing blend of fours is optional and not required
Monk fruit and/or sugar-free maple is optional for lower sugar

Mango smoothie bowl!
2 large mangoes (peeled, chopped & frozen)
1 cup coconut milk
1 cup almond milk
2 teaspoons honey
1 frozen banana
Place the frozen mango, frozen banana, both milks and the honey in your blender.
Blend until smooth.
Divide the mango smoothie between two bowls.
Top with toppings of your choice.

KETO-GRAIN-FREE NO ADDED SUGAR CHOCOLATE GRANOLAAAAA. (Holla!!) this was stupid-easy to make and I can’t wait to have a giant bowl of it with some almond milk tomorrow morning!! dEATS•
5 tbsp flax meal
1 tbsp chia seeds
5 tbsp unsweetened coconut flakes
1.5 ounces slivered almonds (any nuts will do)
4 tbsp honey **any additional add-ins. I used @lilys_sweets_chocolate Extra dark chocolate bar for this one
Preheat oven to 350 and mix ALL ingredients in a bowl. Press onto a @mysilpat mat and bake for 15-20 minutes. (That’s it!!)

One destination I’ve always wanted to visit is Santorini Greece but at the moment this colorful and refreshing Greek Salad for lunch is as close as I’m going to get! 1. Juice a whole bunch of CELERY every morning and drink it on an empty stomach 💚
2. Make a HEAVY METAL DETOX SMOOTHIE everyday: banana, wild blueberries, coriander (cilantro) orange, barley grass juice powder, spirulina, Atlantic dulse.
3. Use natural moisturisers, shampoos and body wash.
4. Drink chaga tea. I buy the powder from Amazon and make it into a creamy latte with coconut milk 😍
5. Add Dead Sea salt to your baths with a few drops of argan oil, it really helps lock in the moisture 💧
