Here‘s what this week’s dinner meal prep looks like.🤗 It was so easy to throw this one together!👏🏼
White quinoa (@wholefoods frozen), steamed broccoli, steamed tricolor carrots (@stahlbushislandfarms), and cornmeal crusted, air-fried, BBQ tofu (I used Organicville BBQ sauce - they don’t have insta). I also sprinkled the veggies with a little sea salt for added flavor!
For the tofu - chop a block into cubes and toss with a bit of avocado oil. Sprinkle on ~2 tbsp of organic corn meal (I use @arrowheadmills) and toss again. Air fry for 5 minutes at 400, take the basket out and shake it, then air fry for 5 more minutes or until as crispy as you’d like. Toss with BBQ sauce of choice!
My Hot Pink Breakfast Smoothie is velvety, SUPER hydrating, and full of potassium. It's great for breakfast (or even a healthy dessert!).
1 1/2 cup of coconut water (Optional: "ferment" it overnight on the counter with water kefir grains, strain, and replace with new coconut water for following morning)
1/4 cup raw cashews
2-4 large dates, pitted
1 whole large carrot cut into chunks
1/3 medium raw beet, peeled
1-2 tsp organic vanilla
12 whole large strawberries or frozen blueberries
Blend all ingredients aside from berries in a high-powered blender until smooth. Add berries, complete blending until smooth and enjoy!

Another tasty @hellofreshuk meal, today we had Pan Fried Chicken with Wedges and Broccoli. Sounds bland but it was delicious and thoroughly recommend it 😊

Garlic and black pepper beef sirloin with red wine jus, kumara and courgette rosti and glazed carrot.
This was the dish that was the most difficult to complete because of all the multitasking we were doing. When I blanked on what to do, I just copied Rodriguez haha. There were a lot of extra notes for this recipe: ingredients added in, different steps, what sizes to cut different vegetables, how long things should be boiled/baked and things we need to remember to not ruin the dish!
Ingredients were flying everywhere but luckily had Eric (chef) coming over to clean up after us and Matt (assistant) to do the dishes.

My first time eating creme brûlée. I learned how to make toffee. Here is a vid of me burning myself for the 4th time.
1st burn: tongue on tomato soup
2nd burn: touching hot handle after taking out monk fish wrapped in pandan leaves from the oven. I had to walk around class holding frozen peas. It hurt more than I thought it would.
3rd burn: touching toffee
4th burn: touching toffee
5th burn: touching toffee
Did I burn my tongue on this? Yes, yes I did. Ummmm, I may have also lost the recipe for this! It has onions, tomato, celery, garlic, potato and I cannot remember in this soup. Celery is disgusting but you can’t taste it in this. I ate it with croutons Eric premade with melted parmesan. My fingers smell like tomato right now. I can swap out the tomato for butternut squash, broccoli, or pumpkin in the future 🎃
I don’t even know the name of this dish because I’m pretty sure Zoe scooped my paper with the recipe up. I get to see my cooking buddy tomorrow, yay! Basically, it is lemon, thyme and feta chicken w/ risotto. It was super delicious.
Note to self: remember to take a lunch box for the left overs. I am dumb and I ate on my way to class.

1/2 lb (220g) ground turkey meat
1/2 lb (220g) ground pork meat (optional, sub with ground turkey for healthier option)
1/2 cup shredded cheese of your choice (mozzarella, cheddar, provolone)
4 cloves garlic, grated + 2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon red crushed chili pepper flakes, optional
1 crumbled bouillon cube, optional
Salt and fresh cracked black pepper, to taste

If in doubt, bowl it out!!! 🥙😎 These colourful plant powered bowls are honestly some of my favourite meals to have, especially when I don’t know what to eat. They’re always full of flavour, texture, are so versatile, and never require a specific recipe. For example with these nutritious Buddha bowls, you can follow a basic formula which will guarantee a tasty meal every time. It goes like this…
🥗 Start with a base of leafy greens, such as spinach, rocket or even darker greens like kale.
🍚 Add a carb source, lets say rice, potatoes, quinoa, or pasta.
💪 Then a source of protein, that could be in the form of some beans, peas, or tofu/tempeh for example.
🥑 Include some healthy fats in the form of avocado, olives or nuts and seeds.
💦 The final stage is a sauce or dressing of some kind, which even can be as simple as a drizzle of tahini (which is what I drenched this in after I took a pretty shot for IG).
🍅 For bonus points, you can add a few extra veggies or a bit of fresh fruit for a sweet touch to balance things out if you wish.
The end result will always be a balanced meal full of nutritious goodness that tastes incredible. Wishing you a wonderful start to the week!
