This week’s meal prep is brought to you courtesy of @wholefoods’ free 2-hr delivery by @amazonfresh! Ordering groceries while sitting in traffic on the Kennedy on our way home from a weekend in Michigan is AMAZING. I made roasted salmon, clubhouse turkey burgers, and tuna salad for protein (I also marinaded chicken breast tenders in @thenewprimal’s classic marinade, I’ll bake tomorrow after work). I roasted Japanese sweet potatoes, zucchini, and delicata squash (picked up at Michigan farm stand on our way home today) and along with a large container of @organicgirl baby spring mix, will cover veggies for the week. I didn’t prep anything for breakfast and there’s not real plan for a couple of days for my husband, but considering I wasn’t sure what kind of prep I’d be able to do at all, I think I pulled it off like a champ (although, honestly, Amazon Fresh is the true hero!).

Lunch at my desk today, but despite its unfortunate appearance, this is definitely #notasaddesklunch lunch. I tried out @howsweeteats sheetpan sausage and peppers (super easy recipe, btw) as part of my meal prep this week. Made with AmyLu’s bison polish sausage and @thenewprimal’s mustard BBQ sauce, I added a handful of baby potatoes we grilled over the weekend. For the office, I packed a @stasherbag bag full of @organicgirl baby spring mix and mixed it in after I warmed it up. Holy ISH! So good!

Dinner and a movie on a Monday night?? Yes, please! My husband has a work dinner tonight so I’m on my own. And thanks to my weekend meal prep, I had my feet up and my @hallmarkmovie started in less than 15 minutes! On my plate: roasted salmon, @organicgirl baby spring mix, tossed with my favorite @tessemaes honey poppyseed dressing with roasted zucchini spears.

Eating at my desk after a walk around the pond during my lunch break. The walk was even worth the frizzy hair knowing I was coming back into this 🔥 little babe. Whole30 beef enchilada skillet from @thedefineddish with roasted sweet potato rounds (because I never miss an opportunity to add sweet potatoes!) to fuel the second half of my day!

I sailed through meal prep this weekend - amazing when you just lean into it rather than fighting against it how much smoother it goes. Hmmmm, life lesson perhaps.🤔 On the menu this week, roasted salmon with zucchini wedges, @thedefineddish’s Whole30 beef enchilada skillet (with roasted sweet potato rounds), @howsweeteats sheetpan sausage and peppers (made with AmyLu’s bison polish sausage and @thenewprimal’s mustard BBQ sauce), and of course, chicken breast tenders baked in the New Primal original marinade and roasted Japanese sweet potato fries. For breakfast I prepped repeats of the sweet potato crusted quiche and pumpkin flax @kodiakcakes. For healthy treats I made more of @cleaneatsbytay’s baked oatmeals with blueberries. I feel ready for the week now!

Excellent afternoon office snack. Strawberry 🍓 is my favorite @good_culture flavor, although the pineapple 🍍 is a close second!
3 hours 47 minutes: that’s how long it took me to meal prep this weekend from start to finish (including cleanup!). Truthfully, I spent most of it feeling pretty resentful that I was stuck in the kitchen. But it’s all about perspective. I was grumbling that I was using 3+ hours of my precious weekend, but I should have been looking at it as I only have to invest 3+ out of my weekend in order to have healthy, nutritious breakfast, lunch AND dinner for my husband and myself ALL week. Mindset y’all. Anyway, on the menu this week for my husband: @eatbanza chicken pesto pasta, @thedefineddish’s healthy hamburger helper, frittatas w/turkey sausage links, and @skinnytaste’s deviled eggs for a snack. For myself I made @rachelsovernightoats, pumpkin flax @kodiakcakes, @cleaneatsbytay’s baked oatmeal, chicken breast tenders baked in @thenewprimal original marinade and roasted Japanese sweet potato fries (4 weeks running, clearly a favorite!), tuna fish salad, and ground turkey with carrot noodles, broccoli & coconut amino mushrooms I’ll serve over @organicgirl girl baby spring mix with @kitehillfoods chive almondmilk cream cheese.

A mighty fine Friday afternoon work snack! @farmhouseculture zesty garden vegetable kraut krisps with @cedarsfoods balsamic caramelized onion hommus. Hummus and veggies have been my afternoon snack jam since I went back to work, but by the end of the week, I’m clean out of fresh vegetables (and fresh fruit!) so kraut krisps to the rescue. So good and they pack quite the probiotic punch! Certainly no disappointment on my end!

Why, yes, salmon can be meal prepped and then reheated later in the week. I’m sharing just in case anyone else wanted to know (personally, I wasn’t so sure, but now I can’t unknow just how well it works!). And hello ALL the greens! Veggie game upped this week ✅ On my plate: roasted salmon from @wholefoodschi, @organicgirl baby mixed greens tossed in @tessemaes honey poppyseed (there really is no other way!) and broccoli and brussels sautéed in a little olive oil spray to reheat.

Busting at the seams! On the menu this week: @philiakelnhofer’s couscous bowls, @therealfoodrds one-pan balsamic chicken veggie bake, and (what is becoming my weekly go-to) chicken breast tenders baked in @thenewprimal original marinade and roasted Japanese sweet potato fries. I also steamed broccoli and Brussels sprouts to my up veggie game this week. For breakfast I prepped a couple jars of @rachelsovernightoats, a sweet potato crusted quiche inspired by my friend @minngirl4life, and I may have even baked 4 of those cute little baked oatmeal’s from @cleaneatsbytay that could double as breakfast (but let’s be honest, I’m gonna scarf those down as evening snacks!).
